Super Easy, Parmesan-Thyme Dinner Rolls (Gluten-Free)
Do you miss having a warm, soft dinner roll with your meals?
So did my family but we are frequently short on time so we needed something fast.
These dinner rolls are so quick, you will be eating fresh rolls in just over an hour with only 10 minutes of prep time. Plus, they are absolutely delicious!
This recipe is 3 simple steps, mix, rise and bake. No kneading, no extra proofing steps.

In a large bowl, mix:
1-16 oz package of Snacktivist Artisan Multigrain Bread Mix
1 TBSP sugar, honey or other sweetener (if using honey, dissolve into the warm water first)
2 cups warm water (80-95 F) *this mix contains live yeast
Mix well using hand mixer or stand mixer, 3 min or until smooth.
Add 3 TBSP of melted butter (vegan butter substitute or olive oil works well)
1/4 cup of grated or shredded parmesan (vegan cheese substitute is great too!)
1 TBSP of fresh thyme leaves (or 2 tsp dried)
1 tsp fresh minced garlic (optional)
NOTE: I like to allow the fresh leaves infuse into the melted butter for flavor. .
Mix well (1-2 min)
Spoon dough into well oiled muffin pans, baste the top of the dough with more melted butter or oil.
Let rise for 30 minutes, you will notice that they get "puffy". They should be allowed to rise in a warm spot but do not use a warm oven as it is usually too hot and will kill the yeast.
After rising, bake for 30-35 min at 400F.
Do not let the hot rolls cool in the pan, they will get soggy. Remove them from pan and place on a cooling rack or breathable surface like a towel lined plate, bowl or counter top.
You can enjoy after a few minutes of cooling time, the texture is best after 10 minutes of cooling on a wire rack.
Parmesan-Thyme Dinner Rolls (Gluten-Free)

These soft, delicious savory rolls are a great addition to any meal. Super simple to prepare, even novice bakers will be delighted at the results.
1-16 oz bag of Snacktivist Artisan Multigrain Bread Mix
1 TBSP sugar, honey or agave
2 cups warm water
1/4 cup shredded or grated parmesan
1 TBSP fresh Thyme leaves (or 2 tsp dried)
1 tsp fresh garlic minced
Mix the dough
Add the entire 1-pouch of Artisan Multigrain Bread Mix to a large mixing bowl.
Combine the sweetener of your choice (1 TBSP of sugar or honey) to the warm water until dissolved.
On low-medium speed, add the water to the dry bread mix until incorporated (3-5 minutes or until smooth).
After the batter is smooth, add in 3 TBSP of melted butter or oil.
While mixer is stirring, add in the cheese, thyme, and garlic if desired.
Mix well for 1-2 minutes.
Scoop dough into prepared trays
Spoon the batter into a well-oiled muffin pans. (12 total)
Baste the top of the dough with more melted butter or oil.
Allow to Rise
Allow the prepared bread to rise in a warm area. Do not proof it in your oven, it is generally too hot and will harm the yeast.
If your home is cool, keep the muffin pan near to the oven or near a heater. Allow extra rise time if needed.
After 30-35 minutes, place the rolls into a preheated oven at 400 F.
Bake for 30-35 minutes or until golden brown.
After the rolls are removed from the oven, make sure to take them out of the muffin pan.
Let them cool on a wire rack or clean, breathable surface like a towel lined tray.
