Super Easy, Parmesan-Thyme Dinner Rolls (Gluten-Free)

Do you miss having a warm, soft dinner roll with your meals?

So did my family but we are frequently short on time so we needed something fast.

These dinner rolls are so quick, you will be eating fresh rolls in just over an hour with only 10 minutes of prep time. Plus, they are absolutely delicious!

This recipe is 3 simple steps, mix, rise and bake. No kneading, no extra proofing steps.

Step 1:

In a large bowl, mix:

1-16 oz package of Snacktivist Artisan Multigrain Bread Mix

1 TBSP sugar, honey or other sweetener (if using honey, dissolve into the warm water first)

2 cups warm water (80-95 F) *this mix contains live yeast 

Mix well using hand mixer or stand mixer, 3 min or until smooth.

 

Add 3 TBSP of melted butter (vegan butter substitute or olive oil works well)

1/4 cup of grated or shredded parmesan (vegan cheese substitute is great too!)

1 TBSP of fresh thyme leaves (or 2 tsp dried)

1 tsp fresh minced garlic (optional)

NOTE: I like to allow the fresh leaves infuse into the melted butter for flavor. .              

Mix well (1-2 min)

Spoon dough into well oiled muffin pans, baste the top of the dough with more melted butter or oil.

 

Let rise for 30 minutes, you will notice that they get "puffy". They should be allowed to rise in a warm spot but do not use a warm oven as it is usually too hot and will kill the yeast.

 

After rising, bake for 30-35 min at 400F.          

Do not let the hot rolls cool in the pan, they will get soggy. Remove them from pan and place on a cooling rack or breathable surface like a towel lined plate, bowl or counter top. 

You can enjoy after a few minutes of cooling time, the texture is best after 10 minutes of cooling on a wire rack.
