There's something about them. Lemons brighten up your day! They're great for baking and they

Pair them with chia seeds and you've just made the perfect pancake! Here's how we did it:
Yields: 4-6 pancakes
Time: 30 minutes
Calories: about 150
Ingredients
- 1 1/4 cup of Snacktivist Idaho Ivory Teff Pancake and Waffle Mix
- 3/4 cup warm water
- 1 teaspoon chia seeds
- 1/8 teaspoon vanilla extract
- 1/2 teaspoon lemon zest
- 1 tbsp fresh lemon juice
- (Option to add 1 scoop vegan vanilla protein powder)
Directions
- In one bowl, mix wet and dry ingredients together
- Let sit for 8-10 minutes
- While batter is rising, heat griddle or pan to medium heat
- Pour 1/4 cup of batter onto the griddle or pan
- Cook until bubbles break the surface of the pancakes, and underneath is golden brown, (about 2 minutes.)
- Flip with a spatula and cook about 1 minute more on the other side. Refrigerate batter after 20 minutes to prevent fermentation
- Stack and top with your favorite garnish! (honey, maple syrup, coconut oil, powdered sugar, more lemon zest or chia)
