This mix is very versatile. The vegan version requires non-dairy milk, oil and optional addition of aquafaba. The traditional version requires eggs, butter/oil and milk. You will literally not believe that you are eating a gluten-free product because these have the light, fluffy texture and nutty flavor of a light whole-grain wheat product. As always, our flour blend is at least 60% so you get a healthy serving of fiber and whole-grain nutrition with these waffles.
This robust, wholegrain mix produces a light and fluffy product with a nutty flavor that holds up to decadent maple syrup, a hearty, fruit compote or even almond butter and bananas!
The waffles or pancakes freeze well too so if you make a bunch, put the leftovers in a ziplock bag and you will have a perfect easy breakfast for later! Just put them in the toaster and enjoy. They keep fresh in the freezer for up to 3 months.
Recipe variation: (use your imagination and add nuts, fruits and seeds)
Rich Cocoa waffles
Add 3 Tablespoons of each dutch cocoa and hazelnut meal to 1/2 bag of pancake mix. Follow desired directions adding 2-3 additional Tablespoons of milk or water to create desired batter thickness. Cook as directed on waffle iron directions. Enjoy with a chocolate ganache drizzle and fresh strawberries.
